Grape varieties: Syrah
Vineyards : sandy soil, situated at approximately 200 m above sea level; training system: espalier spurred cordon
Harvest : by hand into crates, in September
Maceration : for approximately 10-15 days
Fermentation : controlled temperature (24-26°C
Ageing : mainly in stainless steel vats, 5-6 months in barrique and at least 4 months in the bottle
Alcohol content : 13% vol.
Colour : purple colour with violet highlights
Nose : intense, with characteristic scents of jam and spices
Palate : full-bodied, velvety and lingering taste
Food Pairings : grilled meats, flavourful pasta dishes, wild board and game, spicy food, cold cuts, smoked and marbled cheeses
Serving temperature : 16-18°C
